Burrito Zucchini Boats

3 zucchini halved lengthwise

2Tbsp Extra Virgin Olive oil divided

Kosher Salt

Fresh ground black pepper

1/2 onion chopped

2 cloves garlic minced

1 lb ground beef

1/2 tsp chili powder

1/2 tsp ground cumin

1/4 tsp paprika

1 can black beans

1/2 cup chopped cherry tomatoes

1/2 cup corn

1 cup shredded plant based cheese

1. Preheat oven to 350 degrees. Slice zucchini lengthwise, scoop out insides and reserve for later.

2. Place zucchini halves cut side up into bottom of 9×13 baking dish. Drizzle with 1tbsp oil and season with salt and pepper.

3. Bake zucchini until it turns bright green and is just beginning to soften approximately 10 minutes.

4. In skillet over medium heat, heat 1tbsp oil. Add onion and reserved zucchini and cook until soft, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute. Add ground beef breaking up with a wooden spoon; cook until beef is no longer pink.

5. Stir in chili powder, paprika, cumin and season with salt and pepper.

6. Stir in black beans, cherry tomatoes, and corn.

7. Spoon beef mixture into zucchini halves and top with cheese.

8. Bake until cheese is melted and zucchini is tender about 15 minutes. Serve.
